As for the actual model building, I've been involved in a few of these projects myself - my brother and I have done castles and a sailing ship and Lord of the Rings sets, which usually come out of incredibly geeky conversations and "Oh my god that would be so freaking cool!" and they just sort of take on lives of their own. Of course, having enough pieces is a little difficult, even for a devout Lego collector like my brother, but if you go to the Lego store in Downtown Disney they have a section where you can buy buckets of certain bits in a bunch of different colours, which has made things incredibly easier.

Also, your previous convo about the Disney Lego store reminds me a bit of a story from a co-worker who went to Disney World for his honeymoon and told the lady at the Lego store there it was the best day of his life to be at the Lego store. His wife just rolled her eyes.
