I know what you mean about hesitating to cut -- I ordered a Scandinavian Princess Cake for my Mom and Daughters birthdays last August, from a different bakery than I usually go to, sight unseen. It was quite a bit more expensive than the ones I'd purchased in L.A., but with the price of gas what it is I just shrugged that off. My younger daughter went to pick it up, and when she got home and we opened the box we were all gasping -- it was a huge, pale green dome (that's standard, as it's always covered with a sheet of pale green marzipan) and decorated with a spray of the most beautiful lillies (frosting ones in a pearly white and pale pink with stemens tipped with pearls). We kept taking arriving guests out to the garage, where we have a second refrigerator, to see it, and when we finally went to cut it everyone was eeping in distress. It was delicious, too. The perfect cake. (And then I had also made a cake, chocolate with a whipped cream frosting and allighretti trim, which was equally delicious -- a surfeit of riches!)
