“That one?” Jack growled. But, there being nothing for it, he confirmed it. “Aye, that one! What say you?”
Anamaria shouted Aye! with the others, then snatched her hat back, giving Sparrow a glare as she shoved it on again.
She wasn’t satisfied, not in the least. Taken in by a pretty face. Played for a fool, like some green chit. As though she hadn’t known exactly what he was!
Someone, somewhere had to be capable of stealing away Sparrow’s heart and mind as deviously as hers had been stolen. She just hoped she lived to see it.

Yes, he stole her boat, but there always seems more to it than that. And that scene at the end of CotBP, where she puts his coat on, makes me think there's some pretty interesting history between them. ;)

I did miss Ana in the sequels, though I think I know why they dropped her- it would've changed the dynamic when Elizabeth came aboard the Pearl.
Within the PotC world, I hope the explanation is that she made Jack make good on his promise to get her a better boat.

Possibly they didn't drop her at all. Zoe Saldana has a fairly good career and may have been doing other things at the time - and they weren't willing to pay what they needed to, to get her back (or she didn't want to do it).
